Nose: aromas of dried fruit, white flowers, and subtle oxidative notes after aeration. Palate: with lively, fine bubbles, and aromas of hazelnut and brioche, this is a perfectly balanced sparkling wine, with a long, saline finish.

A brand-new blend for this lot, based on the 2023 vintage: 60% Chardonnay, 30% Trousseau, 5% Savagnin, and 5% Ploussard, from organically farmed vines planted across different parcels with predominantly clay-limestone soils, notably Haut-Vernoy and Le Pré Loron. Hand-harvested, direct press, fermentation in tank followed by ageing in barrels that have seen several wines. This is a traditional method sparkling wine, with zero dosage, bottled and aged in stacks for 24 months at the estate. Disgorged during Summer 2025. Sulphites used only sparingly.

Marin Fumey, a young purebred Jura winegrower, has always bathed in Vin Jaune! His parents Adeline and Raphaël founded the estate in 1986 with only 56 acres of vines. While it remains a family affair, today Fumey-Chatelain totals sixteen hectares of vines in the process of being converted to organics.
