A blended cuvée of 50% Chardonnay, 40% Pinot Noir, 5% Poulsard and 5% Trousseau from biodynamically grown vines that were harvested by hand. Natural vinification: direct pressing, fermentation and maturation partly in barrels and partly in vats. The bottles spend minimum of 48 months in stacks. Disgorged in May 2023, it receives zero dosage, making it an extra-brut. No fining, no filtration, just a micro-dose of sulphur.
