Red currant, tart cherry, pepper and spices, dried flowers... Highly drinkable on the palate, smooth, fresh, subtly spiced, with very fine tannins—this is clearly a winemaker who knows his craft. Best enjoyed slightly chilled, perfect as soon as the sun comes out. May have some fizz.
100% Ploussard from old vines ranging from 40 to 60 years old, with a small portion of the plot over 80 years old, grown organically and planted on red Triassic marl in the Marcette vineyard, a locality within Pupillin. The grapes were harvested by hand. Vinification: total destemming, maceration of the berries in stainless steel tanks, without punching down and with only a few pump-overs. Pressing, followed by 10 months of aging in stainless steel tanks. Bottled at the estate without fining or filtration, and with no added sulfites.
