100% Pinot Noir from 30-year-old vines, grown organically and planted on iridescent Triassic marl, on a small 15-are plot in Pupillin. The grapes were harvested by hand and naturally vinified. 70% destemmed, 30% whole clusters: the entire batch macerates together for two weeks, with occasional pumping over and punching down. Pressing, followed by 10 months of aging in stainless steel tanks. Bottled at the estate without fining or filtration, and with no added sulfites.
