A blended cuvée of 75% Ploussard and 25% Trousseau, from 30-year-old vines grown organically and planted on red Triassic marl; this is a single-vineyard cuvée. The grapes were harvested by hand and fully destemmed, also by hand. Natural winemaking: 12 days of maceration, gentle pressing in a pneumatic press, and 10 months of aging in stainless steel vats. Bottled without fining nor filtration, with only a micro-dose of sulfur (added after malolactic fermentation). Maturation in bottles in the estate’s cellars for two years.
