A splendid Pinot with notes of red fruits and spices. A structured, balanced palate, with fine tannins, and great ageing potential.
A wine certified organic by ECOCERT and biodynamic by BIODYVIN, from the limestone hillside known as "les Corvées Sous la Tour". Instead of chemical fertilizers, Stéphane uses homemade compost and herbal tisanes. Grapes are harvested by hand, whole bunches, macerated 3 weeks in conical wood vats. Matured in Burgundy barrels with a slight proportion of new oak, longer aging for this vintage with two years in total. A light dose of sulphites after malolactic fermentation, bottled without added sulphur, and without filtration.
Stéphane Tissot took over the beautiful family estate from André and Mireille Tissot in 1990, and in over thirty years has accomplished a colossal task to reach the summit of the Jura and become a model far beyond the borders of France.
