100% Savagnin from organically grown vines planted in the Grusse and Saint-Laurent-la-Roche villages, on schist soils. Manual harvesting and natural vinification: direct pressing, four years of aging on the lees in demi-muids barrels that have seen several wines, this is a cuvée with ouillage (or topping-up of the amphora) and therefore non-oxidative. Not fined, not filtered, without added sulphites.

Jean François Ganevat
Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
