100% Trousseau, from 6 terroirs: Curon, Rosières, Beranger, Muzard, Chevrette and Bruyères. The vineyards are farmed biodynamically, planted between 1930 and 2002 on limestone scree soils from the Bajocian Age, facing South and West. The grapes are picked by hand, with meticulous sorting in the vineyard. Vinification: the grapes are destemmed by hand, followed by 4 weeks of maceration in conical wooden vats, with some punching of the cap. Matured in 600-litre demi-muid barrels for one year. Bottled with just a microdose of sulphur.
