A vin jaune – the Jura’s legendary oxidative wine – made of 100% Savagnin, from a terroir of degraded and very compact clayey Lias marls, facing east. Located on a slope overlooking Arbois, the vines are certified organic by and biodynamic, and harvested late in October. The wine is put into a Burgundy barrel where it remains at least 6 years and 3 months, without any topping up of the barrel. Over time 1/3 of the total volume evaporates, while a layer of flor forms on the surface of the wine, which nourishes and protects it until it is bottled.
