A cuvée of rare Gamay teinturier (teinturier signifies ‘dyer’, as this red-juiced variety was historically used to add colour to other wines) supplemented with a little traditional Gamay Noir à jus blanc, 10% Grolleau and 5% Melon de Bourgogne, from organic, hand-harvested vines. Vinification: direct pressing of all grape varieties, addition of 2hl of red wine from the Sentinelles cuvée, for a total of 18hl, two short months of aging in fibre tanks. Light filtration, bottled on October 26th, 2023 with just a micro-dose of sulfur.
