100% Cabernet Franc from old vines grown organically, planted in Ligré in 1947 on clay-silica soils at the vineyard site “Les Justices”, in the Chinon appellation. Harvesting is done by hand, with tightly controlled yields. Natural vinification: the grapes are destemmed, followed by gentle maceration by infusion (no forceful extraction), then blending of free-run and press juices, and 9 months of maturation – 50% in 500-litre barrels and 50% in vats. Bottled at the estate without fining or filtration, no added sulfites.

Sophie and Clément Maire-Kurdziel, just in their early forties, are respectively from Moselle and Aveyron in France, and met at the university in Montpellier.
