100% Cabernet Franc from old vines in conversion to organics, planted in Ligré in 1947 on clay-silica soils at the vineyard site “Les Justices”, in the Chinon appellation. Harvesting is done by hand, with tightly controlled yields. Natural vinification: the grapes are destemmed, followed by gentle maceration by infusion (no forceful extraction), then blending of free-run and press juices, and 12 months of maturation – 50% in 500-litre barrels and 50% in vats. Bottled at the estate without fining or filtration, and just a microdose of sulphur.

Sophie and Clément Maire-Kurdziel, just in their early forties, are respectively from Moselle and Aveyron in France, and met at the university in Montpellier. Both became oenologists, they worked for large Estates in France and abroad, before returning to the Loire Valley.
