A 100% Pinot Noir cuvée from vines farmed organically and planted on clay-limestone soils in the commune of Pouillé. The grapes are harvested by hand, of course, followed by maceration of whole bunches for three weeks, and slow and gentle pressing to preserve the fruit. Fermentation is completed and the wine is matured for a bit more than one year in barrels that have seen several wines. Bottled at the estate in December 2023 without fining or filtration, and always without added sulphur.
Paul Gillet
Paul Gillet was born into a family of Alsatian winegrowers. In 1998, he’d make his debut in the wine world as a wine merchant. In 2002, his discovery of natural wines, especially those of Bruno Schueller , would leave a lasting impression, eventually changing his destiny. He opened a brasserie in Buenos Aires in 2007. There, Paul would promote Argentinean vignerons who shared his affection...
