100% Cabernet Franc from organically farmes vines planted in 1950 (massal selection) on deep siliceous-calcareous soils, green sands and tuff. The grapes were harvested by hand on October 7th, 2023. Vinification: destemming, 20 days of maceration in stainless steel vats, indigenous yeasts, gentle pressing, 16 months of aging in 40 hl amphorae and in five barrels. Light filtration before bottling, done at the estate on February 24th, 2025. Unfined, low sulfur: 51 mg/l of total SO2.
