Melon de Bourgogne from 40- to 60-year-old vines grown organically and planted on the superb Muscadet site of Pont-Caffino, which shows Château-Thébaud granite soils (a type of granite richer in calcium and magnesium, which brings more salinity to the wine). Hand-picked grapes of superb quality and natural vinification: direct pressing, fermentation and aging for 9 months on fine lees in stainless steel, fiber and underground tanks. No malolactic fermentation. Unfined and unfiltered, with just a micro-dose of sulfur.
Thomas Foubert
Thomas Foubert is the winemaker behind Ferme des Confluences, which he took over with the 2023 vintage in the heart of Muscadet, in Saint-Fiacre-sur-Maine. Born to farmers and trained as an agronomist, he has always been passionate about wine. As early as 2006, he was harvesting at La Grange Tiphaine in Touraine.
