A blend of 25% Mourvèdre, 25% Grenache Noir, 25% Carignan and 25% Cinsault, from 50-year-old vines farmed organically and facing northeast, on a very cool terroir. Hand-picked in small crates. Vinification is traditional but without any chemical additives. Grapes are 100% destemmed, followed by 50% pressing, 50% saignée (light maceration of the skins with the juice), with temperature control, then 6 months maturation in vats. Bottled with a tiny dose of sulphur.
