Blend of 98% Syrah and 2% Viognier from young and old vines, from 5 to 40 years old, planted on granitic and mica-schist soils, across various lieux-dits in Côte Brune and Côte Blonde: Coteaux de Bassenon, Le Goutay, L’Arsélie, Besset, Gerine… Harvested by hand, sorted in the vineyard and on the sorting table. Vinification: indigenous yeasts, 80% destemmed, cold maceration in temperature-controlled stainless steel tanks. Pressing, 12 months of aging in 228-liter barrels and 600-liter demi-muids, without new oak.
