100% Syrah from 20-year-old vines planted on rolled pebbles, at a density of 8,000 vines/ha, over a total of 5 ha. Harvested by hand, sorting on the grapes in the vineyard and on the sorting table. Vinification: total destemming, indigenous yeasts, cold maceration in temperature-controlled stainless steel tanks, pressing, 12 months of aging in barrels without new oak.
