100% Viognier from 24-year-old vines planted on a total surface of 3 hectares, located right at the edge of the appellation, hence only the “Vin de France” label. Granitic soils. Manual harvest, with sorting in the vineyard and on a sorting table. Vinification with indigenous yeasts, direct pressing, fermentation in barrels and casks, followed by 9 months of aging in demi-muids and casks.
