100% Syrah from Matthieu’s négoce business, drawing on grapes from a selection of vignerons all working biodynamically, with deep clay limestone soils in order to express the fruit of the Syrah. Manual harvest. Natural vinification: indigenous yeasts, 100% destemmed, short fermentation with pumping over of the must, and nine months of maturation in vats. Bottled at the Estate with 1 g/hl of sulphur, and neither filtered nor fined.
