100% Pinot Noir from 35-year-old vines belonging to Philippe Pacalet in Burgundy, planted on clay-limestone soils in Côtes de Beaune. Hand-harvested, the whole clusters are placed in a big tank at Pacalet's, for a three weeks of carbonic maceration with some pumping-over at Matthieu Barret's. Pressed, aged for 8 months in 54-liter dame-jeanne and WineGlobe (large glass carboys). Not filtered or fined, just a micro-dose of sulfur.
