Les Allicots - 2023 - La Cordée Blanche
Ylan Mathieu & Cyril Andrez
A very successful complex Altesse, with a rich nose featuring notes of honey, quince paste, cut grass, and a cereal-like sensation. The palate is harmonious, in tune with the nose, enhanced by an elegant and subtle woody note and a long finish.

100% Altesse from vines grown organically, planted on a mid-slope plot at an altitude of 400 meters, with a south-facing exposure and a steep, constant slope. Clay soil, lots of limestone, with a high concentration of molassic sandstone and glacial moraines. The grapes were harvested by hand on September 25, direct pressing, 24 hours of settling, fermentation in vats then transferred into oak barrels that have seen several wines, for two years of aging. Bottled on July 21, 2025 with just 1.5 g/hl of SO2 added during the winter.

Ylan trained as an engineer and worked in Sweden, while constantly traveling back to deepen his wine knowledge —...
