Marsanne from century-old vines, in their third year of organic conversion and second year of biodynamic conversion, planted on the white limestone terroir of Apremont. The grapes were harvested by hand. Vinification: direct pressing, settling by gravity for 24 hours, indigenous yeasts, fermentation and aging in barrels that have held 4 to 6 previous vintages, aging on fine lees for 18 months. Unfined and unfiltered, 2 g/hl of sulfur added during racking two months before bottling. 18 months of bottle aging in the estate’s cellars.

Matthieu Goury and Guillemette Renard are the couple behind Domaine de Chevillard, rooted in Saint-Pierre-d’Albigny, Savoie, since 2016.
