A blended cuvée of 2/3 Verdesse and 1/3 Altesse, from organically farmed vines. The Altesse grapes are purchased from a winemaker friend, which is why this cuvée is classified as a Vin de France. The grapes were harvested by hand. Separate vinification of the two grape varieties, direct pressing, blending after fermentation, aging for one year in two 350-liter Burgundy barrels: one that has held three wines and one that has held seven, to avoid the wood overpowering the wine. Bottled with low sulfur, approximately 35 mg/L of total SO2.
