100% Petit Manseng from organically farmed vines planted in 1985, 1988, and 2000 in the Caubeigt vineyard: 2.5 hectares facing southwest and west. Silt-clay and rounded pebble soils, with a slope of 10 to 25%. Hand-harvested in early November, with sorting; yields around 20 hl/ha. Natural winemaking: direct pressing of whole clusters, light settling, fermentation in both stoneware eggs and wooden barrels and vats, aging on total lees for 10 months, followed by blending and 2 more months in stainless steel tanks.
