80% Petit Manseng and 20% Gros Manseng, from organically farmed vines planted on silty-clay and clay-limestone soils, on sunny plots facing southwest and south. Slopes ranging from 5 to 30%. Hand-harvested with sorting; yields around 20 hl/ha. Natural winemaking: very slow pressing of whole clusters, light settling, fermentation and aging—half in stainless steel tanks and half in wooden barrels—for 8 months.
