100% Sauvignon from organically farmed vines (but not certified), this is a blend of four parcels on terroirs with clay and flint soils. Hand-harvested and meticulously vinified: direct pressing, heavy settling, long aging on lees without racking in 320 to 600-liter barrels. Bottled without fining nor filtration.
