100% Sauvignon from organically farmed but non-certified vines, planted on clay-with-flint soils (flint meaning silex in french!), very close to the Dagueneau winery—location undisclosed, as it’s labeled Vin de France. Hand-harvested and very precise vinification: direct pressing of the whole clusters, settling, long fermentation and aging on the fine lees without racking, in 320L to 600L barrels.
