Blend: 70% Sauvignon and 30% Chardonnay, from several parcels between 11 and 32 years old. Soils of sand with flint and Sologne clay. The estate is certified organic by ECOCERT, with natural grass ground cover between the vine rows. Harvesting by hand, careful grape sorting in the vines. Vinification: direct pressing, low temperature fermentation, indigenous yeasts, no chaptalisation, no sulphur, 2 g of residual sugar, malolactic fermentation. Matured on fine lees in vats, bottled without fining or filtration, just a micro dose of sulphur.
Hervé Villemade is a natural winemaker situated within the Cheverny appellation. Less of a media darling than his famous neighbour Thierry Puzelat , Hervé and his 25-hectare estate nonetheless have nothing to be shy about.
