A blended cuvée of 80% Sauvignon and 20% Chardonnay, sourced from several vineyard plots aged between 9 and 40 years old, cultivated organically and planted on flinty sand and clay soils in Sologne. The grapes were harvested by hand, sorted in the vineyard. Natural vinification: direct pressing, low-temperature fermentation, indigenous yeasts of course, aged in vats on fine lees for 16 months. Bottled at the estate in December 2025, without fining or filtration, with just a micro-dose of sulfur (1 g/hl).
