100% Syrah from 27-year-old vines grown organically and without any treatments (not even copper or sulfur), planted on hillsides with schist soils. Hand-harvested with low yields. Vinification at AdVinam: 50% destemming, 7 weeks of maceration in truncated-cone and concrete vats, pressing in a vertical press, 18 months of aging in a 300-liter barrel and a 750-liter amphora. Unfined, unfiltered, and with no added sulfites. Aged for 12 months in bottles in the estate’s cellars.
