100% Chardonnay, from a single plot of old vines over 60 years old, planted by Yves’s father, on very heavy, highly mineral Triassic marl soils. Organic viticulture, of course. Hand-harvested and naturally vinified: whole clusters are pressed directly, then transferred to barrels for fermentation and aging—half in 220-liter barrels and half in 500-liter demi-muids (without new oak)—for two years. Bottled without fining or filtration, and with no added sulfites.
