This Gamay comes from organically farmed vines planted in light, shallow soils; it is a cuvée made thanks to purchased grapes, so it strays slightly from Henri’s region of origin. The grapesn were harvested by hand. Natural vinification without additives: whole-cluster maceration, gentle pressing, 9 months of aging in stoneware jars and a in few old barrels (only 5 to 10%). Bottled without fining or filtration, with just a micro-dose of sulfur; followed by 9 months of additional aging in bottle before release.

Henri Chauvet, child of the 1987 vintage, is a new winemaker based in Boudes in Auvergne. After quitting his job in insurance banks, he got his viticulture and oenology diploma, and trained alongside Jérôme Bressy in Rasteau, then with the legendary Thierry Allemand in Cornas.
