100% Chardonnay from organic old vines, planted on a small 20-acre plot with a very steep slope, on predominantly basaltic soils. Harvested by hand. Vinification: one week of maceration of the whole clusters, very slow pressing in a pneumatic press, 9 months of aging in 228-liter and 400-liter barrels that have seen several wines. Bottled without fining or filtration, just a micro-dose of sulfur (1.5 gr/hl). Less than 500 magnums produced.
