100% Gamay grapes grown on organically farmed vines planted on volcanic soils, this cuvée was produced thanks to grapes purchased to people who share the same values, including a winegrower on Henri’s team. The grapes were harvested by hand. Natural vinification without additives: maceration of the whole clusters, gentle pressing, 12 months of aging exclusively in stoneware jars. Bottled without fining or filtration, with just a micro-dose of sulfur; followed by an additional 6 months of bottle aging before release.

Henri Chauvet, child of the 1987 vintage, is a new winemaker based in Boudes in Auvergne. After quitting his job in insurance banks, he got his viticulture and oenology diploma, and trained alongside Jérôme Bressy in Rasteau, then with the legendary Thierry Allemand in Cornas.
