100% Melon de Bourgogne from 30 to 60-year-old vines grown organically, planted on a total of two hectares, with half Gabbro and half Gneiss soils. Harvested by hand in small crates, tiny yields of 15 hl/ha due to frost. Natural vinification: gentle pressing, fermentation and ageing on lees for 15 months. Bottled without fining or filtration, without any added sulphur.
Victor Cossy, child of the 1981 vintage, is the man behind Fermenterre, a small 3 hectares vineyard in Maisdon-sur-Sèvre, Muscadet.
