100% Melon de Bourgogne from 30 to 60-year-old vines grown organically, planted on a total of two hectares, with half Gabbro and half Gneiss soils. Harvested by hand in small crates, tiny yields of 15 hl/ha due to frost. Natural vinification: gentle pressing, fermentation and ageing on lees for 15 months. Bottled without fining or filtration, without any added sulphur.
