100% Melon de Bourgogne from 30-year-old vines grown organically, planted on clay soils over Gneiss subsoil. Plot of 75 ares. Harvested by hand and vinified naturally: gentle pressing, fermentation and ageing on lees for 10 months. Bottled on the Fermenterre estate in July 2023 without fining or filtration, without added sulphur. Almost three years of bottle-aging in the cellars of the estate.
Victor Cossy, child of the 1981 vintage, is the man behind Fermenterre, a small 3 hectares vineyard in Maisdon-sur-Sèvre, Muscadet.
