100% Chenin from organically farmed vines planted on schist soils, this cuvée was made thanks to grapes bought to a winemaker in another region. The grapes were harvested by hand and naturally vinified: direct press, transferred to barrel for fermentation and 8 months of aging in oak barrels that have seen three wines already, all in the alternative Darwin cellar on Bordeaux’s Right Bank. Bottled without fining or filtration, just a micro-dose of sulfites.
