100% Sauvignon from organically farmed vineyards (unfortunately, we can’t tell you where, since it’s classified as a “Vin de France”!). The grapes were harvested by hand and vinified naturally at Darwin’s urban winery, the alternative hotspot on Bordeaux’s right bank. Indigenous yeasts, maceration of the berries with the stems for 6 days, followed by gentle pressing. End of fermentation and aging in vats for one year. Bottled without fining or filtration, with just a micro-dose of sulfur.
