A micro-cuvée in 37.5 cl bottle, made from a blend of typical Jura grape varieties: Chardonnay and Savagnin. Hand-harvested grapes a were laid out to dry on beds of straw for 5 months, concentrating sugars and aromas. Gently pressed, followed by 6 years of aging in old barrels. This natural wine is sulphur-free, and neither fined nor filtered.
Jean François Ganevat
Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
