Chenin from 40-year-old organically farmed vines, planted on a small 50-are plot with outcropping schist soils. The grapes were harvested by hand and vinified naturally: fully destemmed, three weeks of maceration, foot-trodden, and Sandrine and Manu collected the juice just like that, there wasn't even any pressing!
