Primarily Chenin, and the last of the press wine from the estate’s other white grapes: Chenin, Orbois, Romorantin, Chardonnay, and Sauvignon. A cuvée produced thanks to grapes bought to organic winemakers. Harvesting by hand, done by Hervé's team, in small crates. Natural vinification: direct pressing, low temperature fermentation, indigenous yeasts, 9 months of aging in fiber vats and stainless-steel vats. Bottled at the Estate in July 2025 without fining or filtration, just a micro-dose of sulphur.
