Blend of 1/3 Chenin, 1/3 Chardonnay and 1/3 Menu Pineau, from 39- to 44-year-old vines, grown organically and harvested by hand. It is a natural sparkling wine, therefore vinification using the ancestral method: direct pressing, start of fermentation in vats, bottled with 15 to 16 grams of residual sugar/liter in order to create effervescence in the bottle, minimum 27 months of aging on laths, then disgorged in order to remove the lees. Without dosage, not fined, not filtered, without added sulfites. This is a brut nature.
