A blend of 75% Syrah and 25% Mourvèdre, from vines grown organically and planted on a terroir of alluvial terraces on the bank of a pond. The grapes were harvested by hand in small crates, only in the morning. Vinification: direct pressing, light settling of 12 hours to keep the substance, start of fermentation in stainless steel vats, bottled with residual sugars to create the effervescence. End of fermentation and aging in stacks for 6 months. Not fined, not filtered, zero sulfites added.

Marc Castan lives in Leucate in France’s Aude department. This future enfant terrible was born in Narbonne, where he grew up impassioned by both land and sea.
