A blend of 70% Syrah, 20% Mourvèdre, and 10% Carignan from organically farmed vines, planted on parcels in the Pech-Redon, La Made, Le Rieu and Tamaris lieux-dits, on a terroir of alluvial terraces on the bank of the La Palme pond. Manual harvest in small crates, only in the morning. Vinification: direct pressing, light settling of 12 hours to keep the substance, fermentation and maturing in fiberglass vats, on lees, for 6 months. Bottled at the beginning of Spring, unfined, unfiltered, with just a micro-dose of sulfur before bottling.
