Julien is determined to take us on a voyage far beyond his native Sologne with this 100% Chenin cuvée. Grapes harvested manually at full maturity and controlled yields. Vinification: direct press, fermentation in old barrels, 15 months of aging in barrels, bottled in spring 2024. The Courtois DNA is definitely present! The label representing a unicorn is a Maori design drawn by Heidi Kuka, Julien’s partner.
