Chenin from 20-year-old vines, cultivated organically and planted on clay-sandy soils with a significant presence of limestone rock in the village of... (post code 49260, we can't tell you where unfortunately, because of Vin de France regulations). Hand-harvested on September 23, 2023. Vinification: direct pressing, settling by gravity, fermentation begins in stainless steel tanks before racking into 300-500L barrels that have seen 2 to 3 wines, for 8 months of aging, with stirring of the lees. Bottled with a low sulfur dose (40 mg/l total SO2). 1608 bottles produced.
