Sauvignon, Chardonnay, Sémillon, Petit Manseng, Gros Manseng, and Muscat of Alexandria, sourced from an average of 20-year-old vines farmed organically and planted across several plots with clay-limestone soils. Handpicked grapes and natural winemaking: direct pressing, part of the harvest was destemmed, fermentation in stainless steel tanks, concrete tanks, and barrels. Bottled with residual sugars to create in-bottle effervescence. Aged on laths for 6 months; unfined, unfiltered, without added sulphur.
