100% Gamay from biodynamically farmed vineyards planted in Saint-Romain-de-Popey in the Beaujolais region, on granitic sandy soils. The grapes were harvested by hand and naturally vinified: direct pressing of the whole clusters (this is a “blanc de noirs”), transferred to barrels for fermentation, and aged for 8 months on the lees of Chardonnay from the Le Chant du Loup cuvée, in old barrels that have seen five wines. Bottled at the estate without fining or filtration, with just a micro-dose of sulfur.
