100% Pinot Noir from vines purchased in 2019 but owned by Maxime's family since 1989, this is a combination of the terroirs Les Bruillères, Les Boutières and Les Combes, for a total surface area of 25 ares, showing clay-loam soils with the presence of red pebbles. Harvested by hand. Vinification: 90%of the harvest is destememd, 3 days of pre-fermentary maceration at 10°C, followed by 12 additional days of maceration. Aged 14 months in oak barrels, 25% of which are new.
Maxime Dubuet-Boillot
Maxime Dubuet-Boillot, child of the 1989 vintage and grandson of a farmer from Corberon and a vigneron from Volnay, first turned his back on his family vineyards before finally returning to them for good. Maxime’s career began not in wine but auto racing, working as a mechanic for The 24 Hours of Le Mans. He pursued that passion for 10 years before heeding the call of his winegrowing roots....
