Bourgogne Côte d'Or - 2020 - Maxime Dubuet Boillot

Domaine Dubuet Boillot

On notes of cherry, strawberry, oak, tobacco box... Palate: elegant and delicate, feels like a Volnay, the finesse of the tannins is spiced up by a perfectly balanced acidity. A beautiful bottle that allows us to appreciate Maxime’s vinification talent.

100% Pinot Noir from vines planted on three plots in the lower part of Volnay: Les Longbois, Petite Condemaine and Grande Condemaine, clay-silty terroir and deep soils. Manual harvest at optimum phenolic maturity, 30% of whole bunches, 26 days of maceration, pressing, then 12 months of aging in 228-litre Burgundy barrels, without new oak. Bottled without fining or filtration, sensible use of sulfites.

Maxime Dubuet-Boillot

Maxime Dubuet-Boillot, child of the 1989 vintage and grandson of a farmer from Corberon and a vigneron from Volnay, first turned his back on his family vineyards before finally returning to them for good. Maxime’s career began not in wine but auto racing, working as a mechanic for The 24 Hours of Le Mans. He pursued that passion for 10 years before heeding the call of his winegrowing roots....
