100% Pinot Noir, a plot that Maxime is cultivating since the 2020 vintage, 50-year-old vines planted 70 meters from Pommard 1er Cru Les Epenots, therefore very beautiful terroir on brown clays, at the foot of the hill. Manual harvest. Vinification: 20% of whole bunches, 26 days of maceration, pressing, 12 months of aging in 228-litre Burgundy barrels, with 20% new oak. Not fined, not filtered, sensible use of sulfites. 2000 bottles produced.

Maxime Dubuet-Boillot
Maxime Dubuet-Boillot, child of the 1989 vintage and grandson of a farmer from Corberon and a vigneron from Volnay, first turned his back on his family vineyards before finally returning to them for good. Maxime’s career began not in wine but auto racing, working as a mechanic for The 24 Hours of Le Mans. He pursued that passion for 10 years before heeding the call of his winegrowing roots....
